Peanut Butter & Banana Cookies

Peanut Butter & Banana Cookies

These Vegan Peanut Butter & Banana Cookies are a perfect way to start your day!

Ingredients

Scale
  • 1 cup Quick Oats
  • 1 ripe Banana
  • 2 tbsp Peanut Butter (or Nut/Seed Butter of choice)

Instructions

  1. Preheat the oven to 350F.
  2. Peel and mash the ripe Banana into a medium bowl, then add in the Peanut Butter and mix well.
  3. Fold in the Oats until a uniform “dough” forms.
  4. Slightly wet your hands, and form the “dough” into 6 even cookies.
  5. Place the cookies on a lined or greased baking tray and bake for 7 minutes on each side.

Notes

  • Your banana should be ripe and spotty, otherwise the cookies will not be sweet

Peanut Butter & Banana “Sushi”

Peanut Butter & Banana “Sushi”

This Peanut Butter & Banana Sushi is a tasty and affordable breakfast idea!

Ingredients

Scale
  • 12 Tortillas, depending on size
  • 1 ripe Banana
  • 2 tbsp Peanut Butter (Or Nut/Seed Butter/Jam of Choice)

Instructions

  1. If you are using 2 smaller Tortillas, place them on a flat surface so they overlap.
  2. Spread the Peanut Butter evenly across the center of the Tortillas, then peel the Banana and place in the center.
  3. Roll the Tortillas up to form the “sushi,” then cut into pieces with a knife.

Chocolate “Nice” Cream

Chocolate “Nice” Cream

You only need 2 healthy ingredients to make this dairy free “nice” cream! It’s good for you, and the animals 🙂

  • Yield: 1 Serving 1x

Ingredients

Scale
  • 35 Bananas, frozen
  • 1 tbsp Cacao Powder
  • Water, to desired consistency

Instructions

  1. Add the Bananas to a high speed blender or food processor and pulse until they are in tiny pieces. (Note: it helps to have the Frozen Bananas cut into 1″ chunks)
  2. Add the Cacao Powder to the blender with a small splash of water (~ 3 tbsp)
  3. Process this mixture until a smooth, fluffy mixture forms. You will need to stop the blender/food processor every once in a while to scrape down the sides, and may need to add more water in small increments as well.
  4. Scoop into a bowl and top as desired.

Notes

  • Make sure your Bananas are brown and spotty before you freeze them, or the nice cream will not be sweet.

Black Bean Tacos

Black Bean Tacos

These Black Bean Tacos are a great budget-friendly breakfast or lunch idea!

Ingredients

Scale
  • 2 Tortillas
  • 1/2 can of Black Beans, drained and rinsed
  • Handful of Fresh Spinach (or leafy green of choice)
  • 2 tbsp Salsa

Instructions

  1. Warm you Tortillas and Beans on the stovetop or microwave.
  2. Divide the Black Beans and Spinach evenly between each Tortilla, and top with Spinach

Notes

If you have larger Tortillas, you can also make a burrito!

Hash Browns

Easy Hash Browns

Feeling savory for breakfast? These Hash Browns are delicious AND budget-friendly!

  • Cook Time: 24 Minutes
  • Total Time: 27 minutes
  • Yield: 1 Serving 1x

Ingredients

Scale
  • 4 cups Frozen Hash Browns
  • Small handful of Fresh Spinach (Optional)
  • Salt & Pepper, to taste
  • Oil (Optional, and not necessary)
  • 2 tbsp Salsa, for serving

Instructions

  1. Mix the frozen Hash Browns with the Spinach, Salt, and Pepper in a medium bowl.
  2. If you are using oil,  pour the mixture into the bottom of the large pot or pan, with the heat set to low-medium. Bake for 10-12 Minutes on the first side (do NOT touch them!), then use a spatula to cut the potatoes into quarters. Flip over and bake for an additional 10-12 Minutes, adding more oil if necessary.
  3. If you are not using oil, pour the mixture into the bottom of the large pot or pan, with the heat set to low. Bake for 10-15 Minutes on the first side (do NOT touch them!), then use a spatula to cut the potatoes into quarters. Flip over and bake for an additional 10-15 Minutes.
  4. Serve with Salsa, and any other toppings you desire.

Notes

  • You can also make your own Hash Browns by grating fresh potatoes, but keep in mind that this will significantly alter the cooking time.
  • I did not notice much of a difference when cooking the Hash Browns with a small amount of oil versus no oil at all. If you want them to be really crispy, you need to use a large amount of oil (3 tbsp+).
