Heck yes I went there! Has anyone else been feeling all the Fall feels this month?
I’ve made Pumpkin Bread, Pumpkin Spice Cake Pops, and even taken a savory route with some Pumpkin Soup and One Pot Pumpkin Pasta. “But why stop there?” I thought, “let’s make some GRANOLA!”
Not only is this Granola crunchy and perfectly sweet, but it’s also bursting with Fall flavor! Not only is this Granola loaded with Pumpkin Pie Spice, but it’s also speckled with other seasonal nuts like Pumpkin Seeds and Pecans.
All in all, it’s made from only 7 healthy and plant-based ingredients, plus it’s Oil, Gluten, and Refined-Sugar Free! How’s that for a great way to start the day?!
I love to serve this Pumpkin Spice Granola with fresh Non-Dairy Milk, as a topping on a Yogurt Bowl, or eaten on its own as a snack. However you serve it, you’re sure as heck going to wish you made a double batch because this stuff is addicting! 😉 Your house is going to smell amazing while it’s baking in the oven too.
A Few Final Thoughts:
- The secret to uber-crunchy clusters in your Granola is to press it down with a spatula! When it’s time to flip the granola, gently break it apart to keep the big chunks.
- If you have an Allergy you can sub the Almond Butter for another Nut/Seed Butter of choice, and swap out the Pecans for something else?

Ingredients
- ⅓ cup Natural Almond Butter*
- ¼ cup Maple Syrup
- 2 cups Rolled Oats, GF if necessary
- ½ cup Pumpkin Seeds
- ½ cup Pecans, Chopped
- ½ cup Unsweetened Coconut Flakes
- 1 tbsp Pumpkin Pie Spice
- ½ tsp Salt
Instructions
- Preheat the oven to 325F. Add the Maple Syrup, Almond Butter, Pumpkin Pie Spice, and Salt to a large bowl. Mix Well.
- Next, add the Oats, Pumpkin Seeds, Pecans, and Coconut Flakes to the bowl. Mix everything together with a spatula until all pieces are evenly coated in the wet mixture.
- Transfer to a greased or lined baking tray, using a spatula to firmly press it down. Bake for 20 minutes, flip, then bake for an additional 10-12 minutes.
- Remove from the oven and let cool completely on the tray. Serve as desired; leftovers can be stored in a sealed container at room temperature for up to one month.
Notes
- My Almond Butter was made of only Almonds; if yours is salted, reduce the Salt to ¼ tsp
- Almond Butter may be substituted for another Nut or Seed Butter of choice
