Ingredients

4 cups Frozen Hash Browns
Small handful of Fresh Spinach (Optional)
Salt & Pepper, to taste
Oil (Optional, and not necessary)
2 tbsp Salsa, for serving
Instructions
Mix the frozen Hash Browns with the Spinach, Salt, and Pepper in a medium bowl.
If you are using oil, pour the mixture into the bottom of the large pot or pan, with the heat set to low-medium. Bake for 10-12 Minutes on the first side (do NOT touch them!), then use a spatula to cut the potatoes into quarters. Flip over and bake for an additional 10-12 Minutes, adding more oil if necessary.

Serve with Salsa, and any other toppings you desire.
Notes
You can also make your own Hash Browns by grating fresh potatoes, but keep in mind that this will significantly alter the cooking time.
I did not notice much of a difference when cooking the Hash Browns with a small amount of oil versus no oil at all. If you want them to be really crispy, you need to use a large amount of oil (3 tbsp+).
