1 can Fire Roasted Tomatoes (can sub regular, but this adds a lot of flavor!)
2 cup Vegetable Broth
1 cup Water (or more Veggie Broth)
1/2 cup Dry Pasta, cooked according to package instructions
Instructions
Add the Diced Onion, Italian Seasoning, and a splash of water to a large pot over medium heat. Cook for 3-5 minutes, or until the Onion is translucent.
Add all remaining ingredients, except for the Cooked Pasta, to the pot. Stir well to dissolve the Tomato Paste. Bring this mixture to a boil, then reduce the heat to low and let simmer for 8-10 minutes.
Stir in the Cooked Pasta, and add any Salt to taste, if necessary. Serve warm and enjoy.
