Chocolate Covered Cherry Truffles Gluten Free Vegan

These Chocolate Covered Cherry Truffles are healthy but delicious, and only require 5 ingredients to make!

Ingredients

  • 1 cup Frozen* Cherries, thawed
  • 1/2 cup Medjool Dates, Pitted
  • 1 tsp Vanilla Extract
  • 1 cup Oat Flour*
  • 3/4 cup Vegan Chocolate Chips*

Instructions

  1. First, add the Frozen Cherries, Medjool Dates, and Vanilla Extract into a blender or food processor. Blend until everything is well-combined and there are no large chunks of fruit.
  2. Second, add in the Oat Flour to the food processor and pulse until a sticky dough forms. 
  3. Use a 1 tbsp measure to scoop out portions of the dough, and place them onto a plate or small tray lined with parchment paper. The dough will be easier to handle if you wet your fingers for this step.
  4. Place the plate or tray into your freezer for 45 to 60 minutes, to allow the balls to harden.
  5. Melt 3/4 cup of Chocolate Chips using either a Double Boiler or the microwave, then dunk each “ball” into the melted chocolate mixture until it is well coated. Return to the parchment-paper lined tray, and allow the chocolate to harden before serving. Repeat with the remaining “balls.”
  6. Store any leftovers in an airtight container in the fridge for up to 1 week.

Notes

I would recommend the use of frozen Cherries over fresh ones for this recipe, as they become softer once they thaw and will blend easier into a smooth paste

If you do not have Oat Flour on hand, simply blend 1 cup of Quick or Rolled Oats in a high speed blender or food processor, until they have a fine consistency. This usually takes about 30-45 seconds.
