No Bake Peanut Butter Chocolate Cookies

These No Bake Peanut Butter Chocolate Cookies are ready in less than 15 minutes and require only 3 ingredients! A rich and yummy Gluten-Free & Vegan treat.




  1. Pre-measure all of your ingredients and have them ready, as you will have to move quickly once the Chocolate is melted.
  2. Melt your Chocolate in a large glass bowl, using either the microwave or double-boiler method. If you are using the former, Microwave the Chocolate for 1 minute, stir, then continue to microwave at 20-second intervals, stirring with a spatula in between each time. Once the chocolate is 80% melted, stop microwaving and stir rapidly until all remaining pieces have melted.
  3. Add the Peanut Butter, Salt, and optional Vanilla Extract to the Chocolate, stirring rapidly. The Chocolate will immediately start to thicken, so move quickly! Once everything is well incorporated, add in the Rolled Oats and continue to mix until they are evenly distributed.
  4. Use a large cookie scoop (or your hands) to form 10 even cookies – each one will have about 1/4 cup of “batter.” Let cool completely to allow the Chocolate to harden, then serve as desired! Cover the leftovers and store at room temperature for up to 6 days.


  • Omit the Salt if your Peanut Butter is already salted, or just use a small pinch.
  • I prefer to use Crunchy Peanut Butter to give these cookies a little crunch, but Smooth works too! You can also replace the PB with any other Nut or Seed Butter of choice.
  • I do not recommend using Quick or Steel Cut Oats for this recipe; the cookies will not hold up as well.
  • If you would like to keep these Cookies Refined-Sugar Free, both Hu Kitchen and Pacari make some Vegan Chocolate that is sweetened with Coconut Sugar.
