Peanut Butter Cup Granola (Gluten Free)

Vegan, Gluten Free, and Refined Sugar-Free, this Peanut Butter Cup Granola tastes just like dessert, but is full of healthy and wholesome ingredients!

Ingredients

  • 1/3 cup Natural Peanut Butter
  • 1/4 cup Real Maple Syrup, or liquid sweetener of choice
  • 2 cup Rolled Oats, GF if necessary
  • 1/2 cup Peanuts (I used Dry Roasted & Salted)
  • 1/4 cup Chia Seeds
  • 1 tsp Vanilla Extract
  • 1/2 cup Chopped Chocolate or Chocolate Chips

Instructions

  1. Preheat oven to 325F. In a large bowl, whisk the Peanut Butter, Maple Syrup, and Vanilla Extract together until well incorporated.

  2. Add the Rolled Oats, Peanuts, and Chia Seeds to the bowl. Stir well until everything is well-coated in the wet mixture.

  3. Spread evenly on a greased or lined tray, and bake for 15 minutes on the lower rack of your oven. Remove from the oven, flip the Granola, then bake again for an additional 10-12 minutes, until golden and crispy.

  4. After the Granola has finished baking, add the chopped Chocolate to the baking tray and stir gently to incorporate.

  5. Let cool completely (until the Chocolate hardens), then store at room temperature in a sealed container for up to 10 days. Serve as desired.

Notes

  • I used Salted Peanut Butter and Salted Peanuts for this recipe, but if you’re going unsalted, you may want to add a pinch of Salt to the “batter” before baking.
  • I prefer to have chunks of Chocolate in my Granola, so I just lightly (and quickly) tossed them with the granola once it came out of the oven, then let everything cool. However, you can also mix the chocolate entirely to give everything a nice and even chocolatey coating.
  • To keep things refined sugar-free, I used this Chocolate sweetened with Coconut Sugar. You can also use this brand (sweeten with Stevia), or just use any Chocolate you’d like and let it slide 😉
