Savory Golden Oatmeal

Tired of sweet? This Savory Oatmeal is packed with flavor and is a perfect way to start your day.  Easily customizable, it’s perfect for a quick breakfast or Meal-Prep! 


  • 1 clove Garlic, minced
  • 1/2 cup Carrot, grated
  • 2 tbsp Roasted Red Peppers, diced
  • 1/4 tsp Turmeric
  • 1/2 tbsp Fresh Herbs such as Dill or Basil, plus more for garnish
  • 1 tbsp Vegan Cream Cheese (I use Kite Hill)
  • 2 1/2 cup Low-Sodium Vegetable Broth
  • 1 cup Rolled or Quick Oats
  • Salt and Blak Pepper, to taste


  1. First, add a small splash of Vegetable Broth to a medium sized pot; add the minced Garlic and sauté over Medium, until translucent.
  2. Add in another splash of Vegetable Broth,  and then add the Carrot, Roasted Red Pepper, Fresh Herbs and Turmeric. Let cook for another 2-3 minutes. Stir in the Cream Cheese into the mixture until it is evenly incorporated.
  3. Next, add the Oats and Remaining Vegetable Stock to the pot. Increase the heat to high until the mixture starts to boil, then bring it back to medium heat and cook until your desired consistency is reached, stirring frequently.
  4. Transfer the mixture to a bowl and top with additional Herbs, Vegetables, and/or a drizzle of Nut Butter. Enjoy warm.


If you do not have access to Vegan Cream Cheese, you may substitute it with 1 tablespoon of Tahini + 1/2 teaspoon of Apple Cider Vinegar
