Ingredients
Scale
4 cups Non-Dairy Milk*
10 oz (about 3 cups) Fresh or Frozen Strawberries, divided
2 cups Quick or Rolled Oats*
1 tsp Vanilla Extract
2 tbsp Maple Syrup, plus more to taste
Pinch of Salt
Instructions
Cut the tops off of half of the Strawberries and place them in a blender with the Non-Dairy Milk. Blend until smooth and creamy, around 15-20 seconds. Dice the remaining Strawberries and set aside.
Add the Oats to a large pot with the Strawberry “Milk”, Vanilla, Maple Syrup, and a pinch of Salt. Bring to a simmer over Medium heat; once the mixture starts to bubble, stir the remaining Strawberries into the Oatmeal (but save a few to put on top!) Let simmer over medium heat for 5-10 minutes or until your desired thickness is reached. Stir frequently – this helps to make everything more creamy!
Transfer the Oatmeal to serving bowls and top as desired. Leftovers will keep in the fridge for up to 5 days.
Notes
I like to use a 50:50 combination of Quick and Rolled Oats for the best creamy and hearty texture!
You can use fresh or frozen Strawberries for this recipe, but I recommend fresh for the best flavor.
