This 10-minute Vegan Strawberry Milk blends fresh strawberries, maple syrup, and non-dairy milk together to give you a sweet and creamy drink to sip on or use in your oatmeal or cereal. Vegan and Gluten-Free.

Ingredients

  • 1 1/2 cups strawberries ends trimmed and roughly chopped
  • 2 1/2 cups non-dairy milk*
  • 1/4 cup unsweetened dairy-free yogurt optional; for a thicker texture
  • 3 tablespoons maple syrup plus more to taste
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon fresh lemon juice about 1/2 lemon
  • Pinch of kosher salt

Instructions

  • Blend: Add the strawberries, milk, yogurt, maple syrup, vanilla, lemon juice, and salt to a high-speed blender. Blend on high for 45 to 60 seconds, until smooth. Taste the milk and adjust the sweetener to taste, if necessary.
  • Serve & Store: Enjoy immediately, or refrigerate for 15 minutes to serve chilled. Store leftovers in the refrigerator for up to 5 days.

Notes

  • Milk: I recommend using a thick and creamy non-dairy milk like soy milk or oat milk for this recipe.
  • Sweetener: Maple syrup can be replaced with any other liquid sweetener.
