Sugar-Free Golden Milk Energy Bites

These golden milk energy bites are gut-healthy, immune-boosting, and sweetened naturally with prunes! Perfect for travel, meal prep, and on-the-go snacking.

Instructions

  1. Add the prunes to a small bowl and cover with boiling water. Let sit for 5 minutes, then drain.
  2. In the meantime, add the nuts, oats, flax, and spices to a food processor and pulse until a fine flour forms. Add the drained prunes and vanilla extract to the bowl, and process until a fine, thick dough forms, scraping the sides of the device as necessary.
  3. Transfer the dough into a medium bowl and let sit in the fridge for 5 minutes to set. Slightly wet your hands (to prevent sticking) and roll the ball into 1 or 2-tablespoon sized balls, coating in additional toppings if desired.
  4. Store the energy bites at room temperature for up to 3 days, in the fridge for up to 10 days, or in the freezer for up to one month.

Notes

  • Brazil Nuts can be replaced with equal parts almonds, walnuts, or pumpkin seeds if you have a nut allergy.
  • These balls are not very sweet; if you’d like to sweeten things up, add 1 tablespoon of maple syrup or another sweetener to the batter along with the prunes.
