These golden milk energy bites are gut-healthy, immune-boosting, and sweetened naturally with prunes! Perfect for travel, meal prep, and on-the-go snacking.

Instructions
Add the prunes to a small bowl and cover with boiling water. Let sit for 5 minutes, then drain.
In the meantime, add the nuts, oats, flax, and spices to a food processor and pulse until a fine flour forms. Add the drained prunes and vanilla extract to the bowl, and process until a fine, thick dough forms, scraping the sides of the device as necessary.
Transfer the dough into a medium bowl and let sit in the fridge for 5 minutes to set. Slightly wet your hands (to prevent sticking) and roll the ball into 1 or 2-tablespoon sized balls, coating in additional toppings if desired.
Store the energy bites at room temperature for up to 3 days, in the fridge for up to 10 days, or in the freezer for up to one month.
Notes
Brazil Nuts can be replaced with equal parts almonds, walnuts, or pumpkin seeds if you have a nut allergy.
These balls are not very sweet; if you’d like to sweeten things up, add 1 tablespoon of maple syrup or another sweetener to the batter along with the prunes.
