Roasted Strawberry Balsamic Vinaigrette

This Roasted Strawberry and Balsamic Vinaigrette is tangy, sweet, and made from only 5 healthy ingredients! Vegan, Gluten-Free, and Oil-Free.

Ingredients

  • 1 cup of Fresh Strawberries, cut into quarters
  • 1/4 cup of Balsamic Vinegar
  • 1/4 cup Non-Dairy Milk
  • 1 small clove Fresh Garlic
  • 1/2 tsp Salt
  • Black Pepper, to taste
  • 56 leaves of Fresh Basil (Optional)

Instructions

  1. Preheat the oven to 425F. Place the Strawberry quarters on a greased or lined baking sheet, and cook for 25-30 minutes.
  2. Next, add the Roasted Strawberries and all remaining ingredients to a high-speed blender; process until smooth and creamy.
  3. Use as desired, and refrigerate leftovers in a sealed container for up to 9 days.

Notes

  • I have only tested this recipe using fresh Strawberries, though I imagine another berry or thawed frozen berries would work as well!
