1 1/2 cup cooked Red Rice, divided
1 can Cannelini Beans, rinsed and divided
1/4 cup + 2 tbsp Tomato Paste
1 tbsp Ground Flax
1/4 cup Fresh Basil, packed
2 cloves Garlic
2 tsp Nutritional Yeast
1/2 tsp Dried Oregano
1/4 tsp Red Chili Flakes (optional)
1 tsp Salt
Optional Toppings: Marinara Sauce, Red Onion, Lettuce, etc.
Instructions
Preheat the oven to 375F. In a small bowl, combine 1 tbsp of Ground Flax with 2 tbsp of Filtered water; stir, and let sit for 5 minutes to thicken.
Add 1 cup each of Cannelini Beans and cooked Rice to a Food Processor along with the thickened Flax “Egg,” and remaining ingredients. Puree until the mixture reaches an even consistency.
Add the remaining Cannelini Beans and cooked Rice, and pulse to gently combine.
Line or grease a baking sheet, and carefully scoop the mixture out onto the tray to form six equal patties. Place in the oven and bake for 30 minutes, then flip the burgers and bake for an additional 15-20 minutes.
Serve as desired; leftovers can be stored in the fridge for up to one week, or the freezer for up to one month
Notes
Red Rice may be substituted for another type of Cooked Rice
Cannelini Beans may be substituted for another White Bean of choice; you can also use other beans, but I would avoid drier varieties, such as Chickpeas.
Ground Flax may be substituted with ground Chia Seeds
