This Curried Lentil Soup is thick, hearty, and perfect for a chilly day. Not only is it full of nourishing Vegetables and Spices, but it’s also packed with plant-based protein thanks to Lentils! It’ll fill you up and keep your belly warm and happy, without weighing you down.
Plus, it’s ready in just under 30 minutes, and you only need 10 ingredients to make it!
Now, I know Lentils may not be the sexiest thing out there, but guys…..this soup tastes SO. DANG. GOOD. Like, I have no shame in eating it for Breakfast good. Because (1) who dictates the rules for breakfast food anyways, and (2) when the Lentil soup craving hits, it hits hard.
This soup sure does satisfy all of my cravings, and I’m pretty sure it’ll satisfy yours too 😉 I tend to like a little more spice and flavor in my soups, so I decided to make this a Curried Lentil Soup by adding in loads of Fresh Ginger, Garlic, and Curry Powder.
So not only are we getting those classic & cozy Lentil Soup Vibes, but we’re also getting those I’m-a-health-queen-look-how-zesty-and-spicy-and-healthy-this-looks-vibes. Am I the only one who feels that way when I eat a lot of Turmeric/Garlic/Ginger? Surely not…
Regardless, this Soup is perfect for Meal Prep and also freezes well if you’d like to plan ahead. I like to enjoy a large bowl of it on its own or on top of some Steamed Kale, but you could make it even heartier by serving it over some fluffy Rice or grain of your choosing.
A Few Final Thoughts:
- I used dry Green Lentils for this recipe, and would recommend those over canned. They cook relatively fast and hold their texture much better.
- This Curried Lentil Soup is pretty thick; if you prefer runnier soups, feel free to add in some extra Vegetable Broth or Water at the end of cooking.
- Please make sure your Curry Powder is salt-free! Every blend tastes a little different, and I personally prefer this one by Simply Organic. (I’m not a big fan of the Trader Joe’s blend)

Ingredients
- 1 Small Red Onion, diced
- 2 Green Bell Peppers, diced
- 4 cloves of Garlic, roughly chopped
- 3” piece of Ginger, minced
- 1 tbsp Salt-Free Curry Powder
- 10 oz Baby Bella Mushrooms, quartered
- 4 Small Carrots, cut into ¼” slices
- 1 ½ cup Dry Green Lentils
- 3 Small Gold Potatoes, diced
- 6 Cups Vegetable Broth
- Salt and Black Pepper, to taste
Instructions
- First, add the Red Onion and Green Bell Peppers to a large non-stick pot with a splash of water or oil. Sear for about 5 minutes over high heat, until the Peppers and Onions start to brown and caramelize.
- Deglaze the pot with ½ cup of Water and reduce heat to Medium. Add in the Garlic, Ginger, and Curry Powder and sauté for 2-3 minutes, until fragrant.
- Next, add the Carrots, Mushrooms, Potatoes, Lentils, and Vegetable Broth to the Pot. Raise the heat to high and bring to a boil. Once boiling reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally.
- Finish the soup with Salt and Black Pepper to taste, then serve warm. Leftovers will keep in the fridge for up to one week, or the soup can be frozen for up to 2 months.

I’m just about to make the curry lentil stew for lunch. But as I am German its kinda hard to convert all the measurements as we work with the metric system.
I saw on another website ( I think it was from minimalist baker) that there you can find both on the ingredients list, the American and the metric measurements. Just wondering if this would work for your recipes as well, as I am certain that there are other people outside of the U.S. following you. 🙂
