This Potato Salad is…everything 😉

Perfectly tender potatoes, pickled red onions, and everything bagel seasoning coated in a creamy and tangy plant-based mayo? Count. Me. In.

While this Everything Bagel Potato Salad delivers BIG flavor, it’s actually surprisingly simple to make! All you’ll need is 9 wholesome ingredients and less than 30 minutes.

First, chop your potatoes into bite-sized pieces. I used mini gold potatoes, but regular red or yellow will work well too. Add them to a large pot, cover with water and a pinch of salt, then bring to a boil and cook until tender.

In the meantime, prep the rest of the salad ingredients and whisk the easy-peasy dressing together! Then all you have to do is drain the potatoes, rinse them with cold water, toss them in the bowl, and serve.

There are about a million and two potato salad recipes on the internet, so I wanted to do things a bit differently with this one. It still tastes pretty classic, but the extra tang from the pickled red onions and crunchy, garlick-y flavor from the Everything Bagel Seasoning really help to take things to the next level.

I also am not a huge fan of (aka pretty much detest) relish, so I switched that out with a finely chopped dill pickle instead! If you prefer things to be a little sweeter, you can still use regular relish. A bread & butter pickle would also do the trick.

This Everything Bagel Potato Salad has become a summer staple for me. Once you try it, I think you’ll see why! It’s the perfect side for barbecues, picnics, cookouts, and potlucks with family and friends. Creamy, carby, and oh-so-yummy, it’ll leave anyone feeling full and satisfied — vegan or not!

A Few Final Thoughts:

  • The flavors of this salad only improve with time. I would suggest chilling it in the fridge at least 4 hours before serving, but overnight would be even better.
  • I made my own Everything Bagel seasoning blend for this recipe, which is listed in the notes below! You can also use store-bought if you’d like – same goes for the Mayo.
  • Want to get crazy? Toss in some plant-based bacon or cheddar-style cheese shreds for a fun twist!

Everything Bagel Potato Salad

Ingredients

Scale
  • 3  lbs. Yukon gold or red potatoes, cut into 1” pieces
  • ½ cup Easy Vegan Mayo
  • 2 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 rib celery, finely diced
  • 1 green onion, finely chopped
  • 1 dill pickle spear, finely diced (or 2 tbsp relish)
  • ¼ cup Quick Pickled Red Onions
  • 2 tbsp everything bagel seasoning, divided*
  • Salt and black pepper, to taste

Instructions

  1. Add the Potatoes and 1 tsp of Salt to a large pot and cover with water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 10-12 minutes, until the potatoes are fork-tender. Drain the Potatoes and rinse them with cold water, to stop them from cooking further.
  2. In the meantime, whisk the vegan mayo, mustard, and vinegar together in the base of a large bowl. Add in the celery, green onion, diced pickle, pickled red onions, and 1tbsp of everything bagel seasoning; mix until well-combined.
  3. Once the potatoes have cooked, add them to the large bowl and fold them in with the remaining ingredients. Add extra salt and pepper to taste, if necessary. Transfer to a serving bowl, then sprinkle the remaining everything bagel seasoning on top. Serve chilled; leftovers will keep in the fridge for up to 5 days.
  4. WHISK ALL OF THE REMAINING INGREDIENTS TOGETHER IN A SMALL BOWL, THEN FOLD IN THE POTATOES AND MOST OF THE TEMPEH “BACON”. ADD S&P TO TASTE
  5. TRANSFER TO A SERVING BOWL, THEN TOP WITH THE REMAINING BACON. SERVE AND ENJOY!

Notes

  • Everything Bagel Seasoning Blend: mix 2 tbsp minced onion, 1 ½ tbsp poppy seeds, 1 tbsp sesame seeds, ½ tsp garlic powder, and ½ tsp pink himalayan salt together in a small bowl. Store leftovers in sealed container at room temperature in a cool, dark place.

  2. I looove potato salad. And bagels. Definately gonna do my own seasoning! I havej just one question – by “minced” onion you mean fresh onion (veggie)? 🙂 Or dried version, as spice?
