Vegan French Toast that’s made with only 7 ingredients, holds together well, and is really freakin’ tasty?!

I didn’t eat French Toast very often growing up, but when I did it was a real treat. And to be honest, I probably ate equal parts of Maple Syrup as I did bread…but you know how kids are 😉
As traditional French Toast is made with eggs and cream/milk, I knew I still wanted my version to be rich and decadent. It took a little experimenting, but I’ve finally recreated the French Toast I knew and loved…only Vegan! We’re going to use Chickpea Flour to replace our egg (for binding and plant-based protein), and some Cashews to replace that creaminess that would normally come from dairy products.
While French Toast may look fancy, it’s actually so easy to make. Simply add “all” 7 ingredients to a blender, pour it into a dish, dip your bread in, and cook! And as an added bonus, this recipe is also refined sugar-free and oil-free. So really, it’s a win-win-win-win-win-win-win…
A Few Final Thoughts:
- This recipe will work best with White Bread, but you can also substitute Whole Wheat, Ezekiel, or Gluten Free Varieties as necessary. I used this bread when photographing the recipe.
- If you do not have Cashews, you can substitute them for ¼ cup of Nut or Seed Butter instead – just keep in mind that this will affect the final flavor.
- Go as crazy — or as simple — as you’d like with the toppings. I enjoy my Vegan French Toast best with some Fresh Fruit and Maple Syrup!

- Cook Time: 30 Minutes
- Total Time: 35 minutes
- Yield: 4-5 Servings 1x
Ingredients
- ½ cup Cashews, soaked for at least 5 hours*
- ¼ cup Chickpea/Garbanzo Bean Flour
- 1 tbsp Vanilla Extract
- 1–2 tbsp Maple Syrup, plus more for pouring on top
- 1 tsp Cinnamon
- 1 tsp Nutritional Yeast
- 1 cup Filtered Water
- Pinch of Salt
- 7–9 Slices of Bread, depending on size (See Notes)
- Optional Toppings: Fresh Fruit, Berries, Chocolate Chips, Coconut Whipped Cream, etc.
Instructions
- Add all of the batter ingredients to a Blender and process for 60 seconds, or until very smooth.
- Pour this mixture into a wide dish or bowl. Dip each side of the bread into the mixture for 5-10 seconds, then place onto a nonstick skillet over medium-low heat.
- Cook each slice of bread for 5 minutes, flip, then cook for another 5 minutes. I found that I did not have any problems with my French Toast sticking to the pan, but if you have an older nonstick pan, you may need to use some oil.
- Serve warm, and top as desired.
Notes
- If you did not soak your Cashews ahead of time, you can also place them in a pot of water, bring them to a boil, then remove from the heat and let them sit for a few minutes before draining.
- This recipe will work best with White Bread, but you can also substitute Whole Wheat, Ezekiel, or Gluten Free Varieties as necessary. I used this bread when photographing the recipe.
- If you do not have Cashews, you can substitute them for ¼ cup of Nut or Seed Butter instead – just keep in mind that this will affect the final flavor.
- I have not tested this recipe with any other flour other than Chickpea Flour, so cannot provide additional recommendations – try at your own risk!
- Maple Syrup may be substituted for another sweetener of choice. I would recommend liquid sweetener, but you could use a dry (granulated) variety as well.

I watched the video and came over here to try the recipe. I was wondering, since I’m cooking for myself and I can’t eat 7-9 slices at once, have you tried freezing the French toast?
I have not – but you could always cut the recipe in half 🙂

This French toast looks heavenly! Have you tried using this recipe with bread that is slightly stale? I’ve heard that days-old bread is actually the most ideal for French toast as they soak up the most minimal amount of moisture and remain crispy!
The bread I used was pretty dry 🙂
