Sometimes recipes don’t have to be overly complicated to be delicious. This is definitely one of those times.
My first-ever job was as a hostess for a Tex-Mex chain restaurant. While I cannot say that the menu had many healthy and/or vegan options, I can say that working there gave me a deep appreciation for (1) Guacamole, and (2) a good Cilantro Lime Rice. There’s just something so fresh and tasty about the combination of Cilantro and Lime…and once you add that flavor combo to rice, you have a healthy and hearty side dish that goes with just about anything!
This Instant Pot Cilantro Lime Rice is made with only 4 plant-based ingredients but still packs a major flavor punch. The secret is to use the Cilantro Stems (which have just as much flavor as the leaves) and Vegetable Broth instead of Water! This way the rice gets infused with flavor throughout the whole cooking process.
I made this recipe in my 6-qt. Instant Pot, but another size or brand of Pressure Cooker should be fine. If you’d like to make this with White Rice instead of Brown, I have included cooking adjustments in the Recipe Notes. I’ll also include Stovetop Instructions as well. Basically, I just really want you to make this rice.

Instant Pot Cilantro Lime Rice Recipe

Ingredients
- 1 ½ cups Dry Brown Rice (I prefer Short Grain)
- 1 ½ cups Vegetable Broth
- ½ bunch Cilantro, divided
- Salt, to taste
- Juice of 1 – 1 ½ Limes
Instructions
- Roughly separate the Cilantro leaves from the Stems. Finely dice the Stems, and add them to the Instant Pot. Finely chop the Leaves, and set them aside for later.
- Add the dry Rice and Vegetable Broth to the Instant Pot, then close your device and set it to sealing. Cook on Manual High Pressure for 22 minutes, then let the iPot naturally release pressure for 10 minutes before shifting the valve to venting.
- Stir the fresh Lime Juice into the rice, and add Salt to taste.
- Fold in the diced Cilantro Leaves, then serve as desired. Refrigerate leftovers in a sealed container for up to 5 days.
Notes
- I made this recipe in my 6-qt. Instant Pot, but another size or brand of Pressure Cooker should be fine.
- If you’d like to use White Rice instead of Brown Rice you can use the exact same ingredients and instructions, but cook the rice for only 5 minutes instead of 22.
- If you’d like to cook this on the stovetop, add an extra 1 1/4 cup of water to the pot with the rest of the ingredients. Bring everything to a boil, then cover, reduce the heat, and let simmer for 45 minutes.
Fantastic and easy!!! I had 2 cups of veggie broth so I upped the rice to that amount. I added more salt when I added the lime juice at the end with the cilantro leaves and stirred it in. It is SO much better than Qdoba, which my kids rate all cilantro rice against. They loved it! Thanks for this simple recipe! (I used brown long grain rice because it’s all the store had, didn’t affect anything at all as far as I know in the instapot, regarding timing, etc.)

I’m a Newbee. If I reduce cooking time for white rice to 5 mins, do I still leave for 10 mins b4 venting? Last & first attempt with Jasmine rice was mushy (not your recipe)
