This Single Serving Peach Cobbler is a miniature take on the classic cobbler recipe (and might just be the cutest way to enjoy the sweetness of peach season 😊). 

Cobbler’s origins go back to the British American colonies, but fruit-filled cobbler is now a staple in the southern United States as well as the UK. Peach cobbler is especially common in the US when fresh, juicy peaches come into season in the summer! This Single Serving Peach Cobbler recipe packs all of the sweet fruit and fluffy, buttery topping of traditional cobbler into the cutest handheld dessert that’s perfect for date nights or weeknights at home.

Go ahead and treat yourself to fancy dessert tonight because this Single Serve Peach Cobbler takes no time! Even better – this easy-to-make dessert comes together with just 7 simple ingredients: juicy peaches, brown sugar, cinnamon, flour, baking powder, and non-dairy butter and milk. A fluffy, buttery crust sits atop a miniature mound of juicy peaches drenched in sweet, gooey brown sugar. If that doesn’t make your mouth water, I don’t know what will!

HOW TO MAKE SINGLE SERVING PEACH COBBLER

  1. Place the peach chunks, brown sugar, and salt into a greased ramekin and mix until the sugar has dissolved. Press to pack down. 
  2. Mix flour, baking powder, cinnamon, salt, sugar, melted butter/oil, and vegan milk in a bowl, then spread the batter over the peaches. 
  3. Bake until the cobbler crust is golden, serve warm.

You can enjoy this yummy dessert on its own or with one (or two😉) scoops of vanilla ice cream. You can even add a handful of candied or toasted pecans if you’d like to add a nutty crunch. I highly suggest enjoying this cobbler fresh out of the oven when every bite is nice and warm!

CAITLIN’S COOKING TIPS

  • Dice the Peaches: Rather than going with peach slices, dice your peach into smaller cubes. This makes your cobbler cook faster in the oven and much easier to enjoy in the smaller baking dish!

FAQ:

  • Can I make this in a toaster oven? Yes, you can use a toaster oven or traditional oven to bake your cobbler. Some toaster ovens can bake things a little faster than others, so just be sure to check on it while it’s baking!
  • Can I use frozen peaches? Yes, but I recommend thawing them first. Also, something to note is that frozen peaches may not be as sweet as fresh peaches, so you might want to add a little extra sweetener to the filling, depending on how sweet you like it. I have not tried this recipe with canned peaches, but if you do please let me know how it comes out!
  • Can I use nectarines? Yes! Peaches and nectarines are very similar and can be used interchangeably for this recipe. 
  • Is this recipe gluten-free? You can make this recipe gluten-free with an easy swap! Simply replace the flour with equal parts of a gluten-free flour blend and you’re good to go.

For the Filling:

  • Nonstick cooking spray or oil
  • 1 peach, diced
  • 1 teaspoon brown sugar
  • pinch of salt

For the Cobbler Topping:

  • 3 tablespoons (25 g) all purpose flour*
  • 1/4 teaspoon baking powder
  • pinch of cinnamon
  • pinch of salt
  • 2 teaspoons brown sugar
  • 1 tablespoon neutral oil or melted vegan butter
  • 2 tablespoons + 1 teaspoon non-dairy milk (I used oat milk)

Instructions

  1. Prep: preheat the oven or toaster oven to 350F. Lightly grease a small oven-safe ramekin or dish with nonstick cooking spray or oil.
  2. Filling: add the diced peach, brown sugar, and salt directly to the ramekin and use a spatula to mix well, until the brown sugar has dissolved. Gently press on the peach mixture to pack it down into the ramekin more.
  3. Cobbler: in a separate small bowl, add the flour, baking powder, cinnamon, salt, sugar, oil, and non-dairy milk. Mix with a fork or whisk until combined (some small lumps may remain). Use a spatula to pour this mixture over the peaches, spreading it evenly across the top.
  4. Bake: bake in the middle rack of the oven for 23-27 minutes, until the cobbler is slightly golden and a toothpick comes out cleanly. Carefully remove from the oven and let sit for 5 or so minutes to cool.
  5. Serve: serve warm as-is, or as desired! This recipe is best enjoyed fresh, but leftovers can be covered and stored in the fridge for up to 2 days – reheat in the microwave or oven.

Notes

  • Peaches: I used a medium peach for this recipe and did not peel it; you could also use a different stone fruit here, like nectarines or plums!
  • Sugar Substitutes: brown sugar can be swapped for cane sugar or coconut sugar. I would advise against using liquid sweeteners (like maple syrup) as it will make the cobbler topping too moist.
  • Gluten-Free: I have also tested this recipe using equal parts of a gluten-free flour blend; it works well, but may need an extra 2-5 minutes of bake time, so check the cobbler to ensure doneness before removing from the oven.
