Easy Carrot Ginger Dressing (5 Ingredients!)

You only need a blender and 5 ingredients to make this Carrot Ginger Dressing! Tangy, Spicy, and slightly Chunky, you’ll feel just like you’re in a restaurant.

You are *literally* a blender, 5-ingredients, and 5 minutes away from tangy, zesty bliss, my friends.

If you’ve been to a Japanese Restaurant or a Hibachi grill, you’re probably familiar with this Carrot Ginger Dressing. I remember dubiously looking down at that small bowl of lettuce the first time I went to a Hibachi Grill, only to have my mind blown away by the flavor of that dang dressing!  Man, did I always savor every bite of that Salad.

After a little experimentation, I’m happy to say that I have successfully come up with a copycat recipe! Not only does this Carrot Ginger Dressing taste identical to the one served at a restaurant, but it’s so dang easy to make. Simply add some Fresh Carrots, Ginger, Shallots, Miso Paste, and Rice Vinegar to a blender with a pinch of Salt and Water.

You don’t even need to have a high-speed blender for this one, as the dressing is naturally thick and “chunky.”

I was originally inspired to re-create this dressing after I tried the popular “Carrot Miso Ginger Dressing” from Trader Joes. That dressing seemed good in theory, but I was shocked to look at the ingredients and find Expeller-Pressed Canola Oil in there (and a lot of it, at that). That is one Oil that I definitely try to avoid.

Thus, I stood over my blender with my tasting spoons until I found the correct measurements for each ingredient. As you can see below, my Carrot Ginger Dressing is a little darker (due to no Oil), but the flavors taste the same! Plus, it’s a lot more affordable to make in your own kitchen.

I love to use this Carrot Ginger Dressing over a simple salad of Romaine Lettuce and Carrots, but feel free to get creative here! It’s also great with Avocado, other Veggies, and even drizzled over a Stir Fry with Crispy Tofu.

Easy Carrot Ginger Dressing

You only need a blender and 5 ingredients to make this Carrot Ginger Dressing! Tangy, Spicy, and slightly Chunky, you’ll feel just like you’re in a restaurant.

Ingredients

Scale
  • 1 3/4 cup Carrots, cut into rounds
  • 1 small Shallot
  • 1/4 cup + 1 tbsp Unseasoned Rice Vinegar
  • 2 tbsp Ginger, peeled and minced
  • 1 1/2 tbsp White Miso Paste
  • 1/3 cup Filtered Water
  • 1/4 tsp Salt

Instructions

  1. Add all ingredients to a blender and process until smooth. If your blender is not as powerful you may need to cut the veggies into smaller pieces, but it should still blend with no problem.
  2. Transfer the completed mixture to a jar. Use as desired, and store leftovers in the fridge for up to 10 days.

Notes

  • If you are soy-free, substitute the White Miso for Chickpea Miso (though this will affect the flavor slightly).

  1. I searched a bunch of recipes for no-oil carrot-ginger dressing. I tried one that had a bunch of complicated ingredients, and one that had soy sauce but I really prefer this one–it tastes super fresh and tangy. A keeper.

  2. Delicious dressing! I added a teaspoon and a half of lite Tamari sauce. Sprinkling a little of “everything bagel” on the top of my salad as well.

  3. Very tasty! I tweaked it a bit but subbing lite Tamari in place of the salt and I added 2 tsp maple syrup. Finished by adding 2 tsp sesame seeds. So good!!

  4. You should start a line if salad dressings and sauces! I love this stuff poured over everything. So good on a sushi bowl, salad, veggies, grains….EVERYTHING
