These gooey S’mores bars have a sweet crust, rich chocolate filling, and fluffy vegan marshmallow topping to replicate your favorite campfire treat.

Summer camping season might be long gone, but that doesn’t mean we all can’t continue to enjoy our favorite dessert! These Vegan S’mores Bars have a sweet and crunchy crust, rich chocolate filling, and are topped with golden marshmallows – can I get a heck yes?!

Not only are these Vegan S’mores bars the perfect way to recreate your favorite summer camping treat, but they’re also really easy to make, too! You’ll only need 8 simple ingredients – all of which are vegan, gluten-free, and nut free too.

First, make the crunchy “graham cracker” base

It’s hard to find graham crackers that are both vegan and gluten-free, so I decided to make my own base using oats, coconut, and maple syrup! The oats give some subtle sweetness and some nutty flavor, while the coconut adds some crunch and butter-yness. That’s definitely not a word, but I’m going to go with it…

We’ll pop our 3-ingredient base into the oven while we prep the remaining ingredients, to give it some extra golden color + flavor.

Then, spread on the *luscious* chocolate filling

Yes I just said luscious, and yes it was totally necessary. The chocolate layer on these Vegan S’mores Bars is rich, perfectly sweet, and the perfect balance between firm and gooey. Just like a melty piece of chocolate on a traditional s’more! 😉

Believe it or not, we can get that magical texture simply by blending some melted chocolate with silken tofu and full-fat coconut milk. Honestly, you could totally eat this mixture like a pudding, too – I may or may not be guilty of that.

Top with vegan marshmallows, pop in the oven, and enjoy!

The chocolate filling will darken and thicken while our vegan marshmallows puff up and become nice and golden. They’ll actually be a little over-inflated when you first take the baking tin out, but don’t worry – they deflate as it cools.

Did you know most marshmallows contain gelatin? This common ingredient is made from animal skin and bones (yuck) and therefore is not vegan. Luckily you can find marshmallows without it – I usually purchase the Dandies brand, but Trader Joe’s sells a vegan mini marshmallow as well.

These Vegan S’mores bars are an ideal evening treat, and totally appropriate for all seasons. Hey, you could even make them ahead of time and take them camping with you if you won’t have a fire! They’ll last for up to four days at room temperature when stored in an airtight container 🙂

Gooey S’mores Bars

Instructions

  1. Prep: Preheat the oven to 375F and line a 8×8” pan with parchment paper.
  2. Make the Base: Add the oats, coconut, and salt to the base of a food processor or high-speed blender and pulse until a fine flour forms. Add the maple syrup to the food processor along with 1 tablespoon of filtered water and pulse until a damp dough forms. Add additional water in 1 tablespoon increments, if necessary – the mixture should look relatively dry, but hold together when you pinch it. Use a spatula to firmly and evenly press the base into the pan, then bake in the middle rack of the oven for 10 minutes while you prepare the filling.
  3. Prepare the Filling: Quickly rinse the food processor, then add the tofu, melted chocolate, coconut milk, and salt to it. Blend until a thick and even texture forms. Pour the filling over the pre-cooked base and use a spatula to spread it out smoothly and evenly.
  4. Bake: Top with vegan marshmallows, then bake in the middle rack of the oven for 20 minutes. Remove from the oven and let cool completely before slicing and serving; the marshmallows will be puffed up when first removed, but will deflate with time. 
  5. Serve: Slice into 9 even bars, then serve as desired. Leftovers will keep at room temperature in an airtight container for up to 4 days.

  2. These were so so delicious and the chocolate filling was very decadent. I could have eaten it all straight out of the blender! The only slight problem I had was the chocolate didn’t set before I served them (3 hours after baking). So they weren’t exactly like bars, more like chocolate lava cake ???? I put the leftovers in the fridge overnight and today they have firmed up. In the future I will pop them in the fridge to firm up before serving. Thanks for another delicious recipe!
