Lemon Poppyseed Energy Bites (7 Ingredients!)

I’ve kind of been on a chocolate kick latelyWhich is not necessarily a bad thing, but sometimes it’s 2PM and you want a snack and, for some odd reason, you just aren’t feelin’ the rich and creamy Peanut Butter Brownie today.

Sometimes, (key word: sometimes) a lighter snack is in order 😉 and that’s when these Lemon Poppyseed Energy Bites were born!

Not only are these bites easy, quick, and delicious, but they’re made with only 7 healthy and plant-based ingredients!

I wanted these Lemon Poppyseed Energy Bites to be the perfect combination of creamy, chewy, and fluffy – kind of like a (slightly more dense) Donut Hole. Because of this, I opted to use a combination of Quick Oats (for the fluffy), Cashews & Cashew Butter (for the creamy), plus some Maple Syrup to keep things subtly sweet.

Obviously, we can’t forget about the Lemons and Poppyseeds either 😉 We’ll use both Lemon Juice AND Zest in this recipe to really amp up that Lemon flavor. I really love my citrus flavors, and it shows! These Energy Bites have a strong Lemon flavor, but it’s nicely rounded out thanks to some crunch from the Poppyseeds and sweet-smelling Vanilla Extract.

The Assembly for these bites couldn’t be any easier either – simply pulse the Oats and Cashews, add in the liquid ingredients, and fold in the Poppyseeds at the end! I opted to make these Lemon Poppyseed Energy Bites in my blender because I prefer a smoother texture, but you can use a Food Processor if you want things to have more bite.

These Lemon Poppyseed Energy Bites are a perfect afternoon pick-me-up or on-the-go snack! Light and refreshing, they’re the perfect blend of zesty and sweet to give you that energy boost you need to power on through your day.

A Few Final Thoughts:

  • If you can, please use fresh Lemon Juice for this recipe – not the bottled stuff. Because it’s unpasteurized, the fresh stuff tastes so much better – it has a sweeter, almost more floral note. Bonus points if you can snag some Meyer Lemons for this recipe, which are particularly sweet and fragrant!
  • I use this handy Microplane to zest my Citrus; it definitely makes things easier, but you can also use the finest setting of a vegetable grater as well.
  • Not feeling the Lemon? Switch things up by replacing the Citrus! Lime, Orange, or even Grapefruit would be great here.

Lemon Poppyseed Energy Bites

Ingredients

  • 1 ½ cup Quick-Cooking Oats
  • ½ cup Raw Cashews
  • 2 tbsp Cashew Butter 
  • ¼ cup Real Maple Syrup (see notes)
  • Juice + Zest of 1 Lemon
  • 1 tsp Vanilla Extract
  • 2 tsp Poppy Seeds
  • Pinch of Salt

Instructions

  1. First, add the Oats to your Blender or Food Processor and process until a fine flour forms. Toss in the Cashews and pulse until finely ground as well.
  2. Add all remaining ingredients except for the Poppy Seeds to the Blender and pulse/process until a thick, uniform dough forms. Pulse in the Poppyseeds until well combined, or transfer the mixture to a bowl and fold them in by hand.
  3. Use a 2 tbsp scoop to measure out each ball, and roll each ball in between your hands until it forms an even circle. Store these bites in the fridge for up to 10 days, or in the freezer for up to a month. If you opt for the freezer, let each ball thaw for 5-10 minutes before enjoying.

Notes

  • As these are intended to be a snack, these bites are subtly sweet. If you prefer them to be sweeter, add 1 additional tbsp of Maple Syrup to the mixture.
  • Cashew Butter can be replaced with another Nut or Seed Butter, but keep in mind that this will affect the final flavor! I have not tested this recipe with anything besides Cashew Nuts, but I imagine Almonds, Walnuts, or Pecans would work as well.
  • I would suggest using a high-speed Blender to make these balls, as they will be more light and fluffy. A Food Processor will work too, but they will have a little more bite!

  1. Just made these, they are delicious! I love the strong lemon flavor, but mine too were too wet. I added a little shredded coconut and also rolled them in shredded coconut. I’m hoping they hold up well, but the taste is divine! Thank you!

  2. I just made these for the second time and they are kind of the perfect snack/post meal sweet bite for me. I was pretty generous w the poppyseeds. I did add about 2 tablespoons of almond flour because it seemed like the mixture was too wet at first. My only potential complaint about this recipe is that juice of one lemon can be such a variable amount that it leaves some uncertainty! Sort of wish it was written in tbsps or something. But it wasn’t a big issue. Thank you for this recipe!

    1. So glad you’ve been enjoying the recipe! The juice of one lemon is based on the average size of something like a meyer lemon.

    1. Balls typically work best with these sorts of texture as making it into a bar shape likely means it will flop/droop and not hold up as solid as something like a traditional bar.

  3. Just made these! Was always super hesitant to make any sort of ‘energy bite balls’ since we don’t have a food processor, but this worked great! Was careful not to overwork the blender, and easily halved the recipe to make sure they wouldn’t go to waste – definitely should have been the whole size!

    No issues with making the recipe. I used peanut butter since that’s what we had on hand, and added some coconut flakes on the outside but honestly the sweetness level is perfect and the poppyseeds add a great crunch. Will definitely be making these again!

  7. I want to make something like this for an Easter gathering, but my daughter is allergic to all tree nuts. How would you tweak this to be nut free? I still want to keep the Lemon/Poppy seed flavor if I can! Maybe hemp or flax instead of the raw cashews and them maybe vanilla protein powder instead of the peanut butter?

    1. Hi Michelle! I would suggest using Sunflower or Coconut Butter in place of the Nut Butter. I would add extra nut butter and replace the cashews with more oats!

  11. I have tried this recipe with cashew butter and peanut butter. I think I prefer the peanut butter better!

    1. I’d recommend storing them in the fridge because of the Lemon Juice – they should last about a week or two! I don’t think they would fare well in the mail.
