Creamy, tangy, and a little bit spicy, this Russian Dressing has all of the flavors of the classic version…but is Vegan and Oil-Free!

Okay, I’m going to be honest here…I mostly wrote this blog post because I wanted to make a Vegan Eggplant Reuben. And Reubens typically have Russian Dressing on them. Nevertheless, I was really happy with how this recipe came out…and I think I need to incorporate Russian Dressing into my life more often!

What exactly is Russian Dressing, you ask? It’s kind of like Thousand Island dressing, which is typically a blend of Mayonnaise, Ketchup, and Spices. Russian Dressing uses similar ingredients, but has a little kick to it from both Horseradish and Hot sauce!

To be honest, this was a very easy recipe to Veganize. All I had to do was to create a Cashew Mayo in place of traditional Mayonnaise, and use someVegan Worcestershire Sauce! The rest of the Ingredients are naturally vegan, and you should have no problem finding them in your grocery store.

All you have to do is soak your Cashews, pop everything into a blender, and you’re good to go! This Russian Dressing is great on Vegan Reubens, other Sandwiches, or even with Salads. If you would like to have it as a Salad Dressing, I would suggest adding 1-4 tbsp of Filtered Water to this recipe, to make it a little runnier.

Vegan Russian Dressing

This Vegan Russian Dressing is Oil-Free, Tasty, and made with only 10 Ingredients! Perfect on salads or as a spread with sandwiches.

Ingredients

Scale
    • ½ cup Cashews, soaked overnight
    • ⅓ cup Filtered Water
    • 1 tsp Nutritional Yeast
    • Juice of ½ Lemon
    • ¼ cup Ketchup
    • 2 tbsp Sweet Relish
    • 1 tbsp Prepared Horseradish
    • 1/4 cup White Onion, diced
    • 1 tsp Vegan Worcestershire Sauce
    • ¼ tsp Paprika
    • Dash of Hot Sauce (I used Tabasco)

Instructions

  1. Add all ingredients to a high-speed blender, and process for 45-60 seconds or until smooth and creamy.
  2. Transfer to a jar with a lid and store in the fridge for up to 7 days. Serve as desired.

Notes

  • Cashews can be substituted with store-bought Vegan Mayo or Silken Tofu, if you have a nut allergy. If you use Mayo instead of Cashews, leave out the Nutritional Yeast, Water, and Lemon Juice as well.
  • If you forget to soak your Cashews ahead of time, you can either (1) carefully pour hot water over them and let sit for 30 minutes, or (2) microwave them in water for 3 minutes and let sit until soft.
