This Peaches & Cream Overnight Oatmeal is tangy, creamy, and full of peachy goodness! Made with only 8 ingredients, this wholesome recipe is the ultimate fuss-free breakfast.

Does anyone else reminisce over those little packets of instant oatmeal we ate when we were kids? Let’s be real though —they were never as good as my memory tells me they were. Freshly made oatmeal with chunks of real fruit just cannot be beat! Enter this Peaches & Cream Overnight Oatmeal. I made this Strawberries & Cream Oatmeal a while ago, but as soon as I tasted it I knew I needed to try it with peaches.

This recipe gets double the peachy goodness thanks to (1) a homemade peach-infused plant milk and (2) mixed-in chunks of juicy, ripe peaches. The best part? It’s made with only 8 ingredients, takes around 15 minutes to make, and is vegan and gluten-free. Now that’s my kind of breakfast!

INGREDIENTS FOR PEACHES & CREAM OVERNIGHT OATMEAL

I actually think I’ve upped my game since my Strawberries & Cream Oatmeal recipe — this one is even more creamy (is that even possible?) thanks to the addition of a little non-dairy yogurt and bit of chia seeds!

  • Rolled Oats: A necessity for any oatmeal recipe, rolled oats are a hearty and wholesome way to start the day, leaving you satisfied until lunch.
  • Fresh Peaches: Is there anything more satisfying than biting into a ripe peach? Of course, frozen will work for this recipe as well, but if you can get your hands on a couple of fresh peaches, you’ll thank me later.
  • Non-Dairy Milk: The tanginess of the peaches pairs perfectly with an extra creamy plant-based milk. I recommend using cashew or oat milk for this recipe for the best flavor combination – bonus points if it’s homemade!
  • Non-Dairy Yogurt: Any thick & creamy dairy-free yogurt will work for this recipe! I prefer to use a thick coconut yogurt because it gives the oatmeal an extra creamy texture and tangy flavor.
  • Chia Seeds: adds a bit of healthy fat, while helping to combine all of our ingredients and create a nice, thick consistency.
  • Maple Syrup: is my favorite sweetener for this recipe because (1) it’s liquid so the sweetness mixes in perfectly and (2) it’s earthy, cinnamon-y flavor pairs so well with the sweet & tangy flavors of fresh peaches.
  • Vanilla Extract: who doesn’t love a little bit of vanilla in their oatmeal?? For me, its deliciously sweet and floral flavors are a must. 

HOW TO MAKE PEACHES & CREAM OVERNIGHT OATMEAL

Since peaches are more of a summer fruit, I decided to make overnight oats for this variation! If you do prefer your oats warm, see the recipe notes for a stovetop variation.

  1. Quarter one peach and finely dice the other peach.
  2. Add the quartered peach to a blender with the milk, maple syrup, vanilla, salt, and optional cinnamon and blend until smooth.
  3. Add the oats, chia seeds, and yogurt to a bowl. Pour the peach milk into the bowl, stir until well combined, and let sit for about 5 minutes, then add the diced peach and fold into the oatmeal.
  4. Place in the fridge overnight and enjoy the next morning!

The best part about overnight oats is how easy they are to make and how perfect they are for meal prep. They store well in the fridge for up to 5 days and they’re super portable — so they can be made ahead of time for work, school, a weekend camping trip, or a morning picnic in the sun.

I love to enjoy this Peaches & Cream Oatmeal cold, but it is just as satisfying when served warm, so if that’s your jam then just pop it in the microwave to reheat when you’re ready to enjoy!

Peaches & Cream Overnight Oatmeal

  • 2 ripe peaches, divided
  • 2 cups creamy non-dairy milk* (store-bought or homemade)
  • 1 tablespoon grade A maple syrup, plus more to taste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • pinch of salt
  • 2 cups (190 g) rolled oats, gluten-free if necessary
  • 2 tablespoons chia seeds
  • 1/4 cup (70 g) non-dairy yogurt*

Instructions

  1. Prep: Quarter one peach and finely dice the other; you can peel the peaches if you’d like, but I kept the skin on. Add the quartered peach to a high-speed blender along with the milk, maple syrup, vanilla, cinnamon, and salt. Blend on high for 45-60 seconds, until the peaches are finely blended into the milk.
  2. Mix: Add the oats, chia seeds, and yogurt to a large bowl. Pour the peach milk into the bowl, then stir until everything is combined. Let sit for at least 5 minutes, to allow the oats and chia seeds to absorb some of the liquid. Once thickened, add the diced peach into the oats and fold until evenly distributed.
  3. Store: transfer the oats to 2-3 jars or other containers, then store in the fridge for at least 4 hours, preferably overnight. Enjoy cold or warm; leftover will keep in the fridge for up to 5 days.

Notes

  • Non-dairy Milk: I recommend using a thick and creamy milk, like cashew milk or oat milk – it adds to the creaminess!
  • Non-dairy Yogurt: I used a thick coconut yogurt for this recipe, but would recommend any thick & creamy dairy-free yogurt. If you don’t want to use yogurt, I recommend using an extra 1/4 cup of milk and 1 tablespoon of fresh lemon juice, to replace the tang.
  • Peaches: I find fresh peaches to be sweeter than frozen, but you can make this with frozen peaches as well; I recommend using 1 1/2 cups of frozen peaches.
  • Stovetop Instructions: If you’d like to make this on the stovetop, add an additional 2 cups of water to the peach “milk”. Cook the milk, oats, diced peach, and chia seeds on the stovetop over medium heat for 5-10 minutes, stirring occasionally. Stir in the yogurt, then serve warm.

  2. This was fabuouls – I used nectarines and coconut milk – nummy! Plus I used banana yogurt and topped it with hemp hearts and toasted coconut!

  4. This was DELICIOUS! This recipe gave a plain breakfast a va-va-voom makeover. I see myself using this again and again with different seasonal fruits to brighten up quarantine mornings. The only thing I’d change for my taste is to use less vanilla extract to let the peach flavor shine even more.
